Simple Homemade Caramel
I was impressed, and it passed Michael's caramel-lover standards, so I will definitely be making caramel this was in the future, varying cook temp and time for different textures. I just made a toffee version for a pie I'm making (Danger Pie. From Pinterest, of course).

'Healthy' or Single Ingredient Ice Cream
I probably won't do this one again. The kids weren't interested and I'm not a fan of bananas and in order for it to taste like I wasn't just eating a banana, I would have had to use an excessive amount of peanut butter. Banana lovers might like it, though. Also, I would recommend eating it when its first made instead of refreezing it.

Chicken Roll Ups & Buffalo Chicken Roll Ups
I made both versions of these, thanks to Jessi's suggestion. They were both yummy. I also made a ranch and hot sauce dip for the buffalo ones.
Baked Asparagus
Excellent way to cook asparagus! I made a big batch and they stayed crisp when reheated.
Oven Baked Ham and Cheese Sliders (with poppy seed dressing)
Matt like these more than me. I was hoping for a little something more, but in order to make it easier, healthier, and cheaper, I left out the mayo completely and used a store-bought poppy seed dressing instead of making my own. Maybe night time I will make the effort to make the homemade dressing. Still, even the store-bought dressing did give it a surprising twist, making it taste more fresh and something else that I can't find the word to describe. And it did make for a quick and easy yet tasty weeknight meal.
These were really good! I left a few things out (cause I am such a picky eater and also I didn't think they were necessary).
This was good, although not especially great. However, considering it took me like 2 minutes to prepare before I rushed out the door to Pit Crew at Church tonight and once I got home all I had to do was scoop it onto my plate, I'm not gonna dis it. I might even make it again in the future but maybe throw a little fat free sour cream on top or something.
I also wanted to note that my children refuse to eat almost all of my delicious dishes. They may try a bite but then make a face like they're disgusted and can't bear to take another bite. I know different people have different (and sometimes strong) ideas on this and I'm not saying one way is right and another isn't, but I'll tell you what I do. I try to encourage them to try new things, but I am, and have always been a picky eater myself (despite my poor Mama's best efforts), so I have a hard time forcing them to eat a lot of food that they simply do not like. One of the great things about some of these recipes is that they can easily be adapted for my picky eaters in a way that everyone is pretty much happy. The ham and cheese sliders, for instance, become ham sandwiches for the kids with ham and roll only. I made plain quesadillas for the kids when I made our crispy chicken wraps. The asparagus, well, they just didn't touch it. :)
